A Dollop of Wisdom

I'm headed out this afternoon to a lovely bridal shower for my friend, Monica. Her MOH, Kelly, sent two recipe cards along with the invitations. One for your favorite recipe and one for "A dollop of Wisdom."

I wrote this for my recipe:

Spicy Tortellini
2 T Olive Oil
1 T Crushed Garlic
3 T pesto sauce
1 pack refrigerated tortellini
1 can DelMonte Mexican Stewed Tomatoes
1 bag fresh baby spinach

Cook tortellini 2/3 of required time; drain and set aside. In a large skillet, add olive oil and garlic; cook until it starts to brown on medium heat. Add pesto sauce and cook for two minutes while stirring. Add tortellini and stir-fry on medium high. Add Mexican tomatoes (including liquid) and bring to a boil while stirring. Add spinach, turn heat to medium low and cover stirring occasionally until the spinach wilts. Remove from heat and enjoy!

Remember to have occasional date nights. It's easy to settle into a routine and become more like roommates than great loves if you don't spend special time with each other!
